SPOILERS: Now, I may be nitckpicking here, but the scene where Obi-Wan Kenobi cuts off Ponda Baba's arm in the Mos Eisley cantina (A New Hope) is missing, and so is the scene in Return of the Jedi where the Rancor eats Oola. My guess is that Disney and LucasFilm thought those scenes were too brutal to be included in a graphic novel for children.
